The Bikini Cocktail

Yields 10 servings

For the Clementine Syrup (produces 750ml)

300ml fresh clementine juice
200ml fresh lemon juice
500g fine sugar

For the Premix (produces 850ml, enough for 10)

400ml premium vodka
100ml London dry gin
150ml peach liqueur
200ml clementine syrup (from the recipe above)
A few cranberries, to garnish
Mandarin essential oil, to finish

Directions

For the Syrup: Place all the ingredients inside a saucepan, heat until it reaches a simmer, mixing until the sugar dissolves. Next, remove from the stove allowing it to cool down fully. Pour to a clean bottle, cap it and store in the refrigerator, it will last for around a month.

To make Batch Mix: Combine the specified liquids in a sizeable container, allow it to infuse for one hour, then filter it best through cheesecloth, making it perfectly clear.

When ready to serve: Pour 85ml from the premix into your stirring glass containing ice, gently stirring gently for about 60 seconds until cold. Pour to a cold coupe glass or a similar vessel, top with some cranberries and complete it by giving it a brief mist of mandarin oil above the glass.
